Zambian Fritters with Orange Syrup

  • 300g bread flour
  • 12g fresh yeast or 10g instant
  • 30ml sugar
  • 2ml salt
  • 300ml water
  • 15ml veg oil
  • Veg oil for deep frying

For the syrup

  • 90g sugar
  • Zest of 2 oranges
  • 1 cup Clover Krush Orange Juice

For the icing:

  • Orange juice and icing sugar
  1. Rub yeast into a little bit of the flour then add the rest of the flour, mix in sugar, salt, water, and veg oil to make a soft dough.

  2. Set aside in a warm spot until doubled in volume.

  3. Once proved, heat vegetable oil in a large wok or deep fat fryer and drop spoonfuls of the dough into the hot oil.

  4. Fry until golden brown and cooked through approx. 5 minutes.

  5. For the syrup, put all ingredients in a pan and heat until sugar has dissolved and syrupy.

  6. Make thick icing with icing sugar and orange juice.

  7. Drizzle icing over the fritters and serve with syrup on the side.
