Roasted Carrots with Orange Juice


  • 300 mixed carrots, peeled (I usually use those colourful ones from Woolies)
  • 80ml Clover Krush Orange Juice
  • 1 garlic clove, crushed
  • 1 tsp fresh ginger, finely chopped
  • 2 sprigs of fresh thyme
  • 2 tbsp Olive oil
  • Sea salt & ground black pepper


Preheat oven to 220 degrees Celcius.

Place carrots in a pot of salted water and lightly boil for 15 minutes

Drain liquid and place carrots in a baking dish.

Toss with the remaining ingredients and roast for 30-40 minutes.
