- 300 mixed carrots, peeled (I usually use those colourful ones from Woolies)
- 80ml Clover Krush Orange Juice
- 1 garlic clove, crushed
- 1 tsp fresh ginger, finely chopped
- 2 sprigs of fresh thyme
- 2 tbsp Olive oil
- Sea salt & ground black pepper
PreparationPreheat oven to 220 degrees Celcius.
Place carrots in a pot of salted water and lightly boil for 15 minutes
Drain liquid and place carrots in a baking dish.
Toss with the remaining ingredients and roast for 30-40 minutes.
