- 500g Litchi’s, peeled and pitted
- 500ml coconut water
- 1/2 spanspek, roughly chopped
- 2 limes, juice
- 1/2 cup raspberries
- 50g white chocolate, melted
- 1/2 cup toasted coconut
PreparationPlace the lichi’s, spanspek and lime juice in a food processor and blend until puree forms. Pass through a strainer and mix with coconut water. Pour into popsicle forms, drop raspberries into forms and freeze.
Remove from forms and drizzle with melted chocolate and toasted coconut. Eat immediately or return to freezer until ready to serve.
