Jollof Rice with Atlanta BBQ Wings

Ingredients

  • 1 tomato
  • 1 red pepper
  • 1 purple onion
  • 1 habanera pepper
  • 1 cup Sweet & Spicy Sweet Baby Ray’s BBQ Sauce
  • 3 cups rice
  • 2 tbsp vegetable oil
  • 1 tbsp thyme
  • 3 – 4 bay leaves
  • 1 tsp chopped garlic
  • 2 lbs chicken wings (drumettes & flats)
  • 2 tbsp Sazon seasoning

Preparation

Jollof Rice:

Roughly chop tomato, red pepper, habanera pepper and purple onion; add to a blender for 1 -2 minutes until desired consistency is reached.

In a large pot with oil, add blended veggies with thyme, bay leaves, 1 tablespoon Sazon seasoning and chopped garlic.

Stir mixture well and let thicken for 7 to 10 minutes on low heat.

Add 3 cups of rice to mixture, in the same pot.

Let cook for 15 to 20 minutes on medium heat until rice is tender.


Wings:

Put wings in a large mixing bowl.

Sprinkle 1 tablespoon Sazon seasoning over the wings.

Add the BBQ sauce.

Mix well.

Cover a baking pan with foil and place wings on top.

Cook wings in oven for 30 to 35 minutes on 375 degrees Fahrenheit.

Remove wings from oven and add ΒΌ cup more of BBQ sauce.

Place back in the oven for 15 minutes.

Remove wings from the oven.

Serve Jollof Rice and Atlanta BBQ Wings with a small mixed salad of your choice.
