- 1 red pepper
- 1 purple onion
- 1 tomato
- ¼ lb shrimp, peeled
- 2 c yams
- Maggie Seasoning
- 1 tbsp black pepper
- 2 tbsp palm oil
- ¼ lb crab legs
Roughly chop onion, tomato and red peppers.
Add the veggies to a blender for 30 – 40 seconds to reach the desired consistency, then set aside.
Chop yams into rounds and boil in large pot of water.
Boil yams 30 – 40 minutes until tender.
Test by piercing yam with a fork.
Drain excess water from the yams.
Add the blended veggie mixture and Maggie to the same pot as the yams.
Heat should be set to medium.
Cook for 5 minutes, then add palm oil.
Stir well to ensure all seasonings are well mixed.
Add shrimp and whole crab legs to the pot.
Cook for another 10-15 minutes for flavors to mix, then serve.
