Reindeer Cookies

  • 100g butter, softened
  • 175g brown sugar
  • 4 tbsp of golden syrup
  • 1 medium egg
  • 350g cake flour
  • 2 tsp of ground ginger
  • 1 tsp bicarbonate of soda
  • Round cookie cutter
  • For decorating:
  • Red mini Astros
  • Packet plain crispy pretzels
  • 90g dark chocolate, melted
  1. Pre-heat the oven to 180°C.

  2. Cream together butter and brown sugar.

  3. Beat in the golden syrup and egg until combined.

  4. Mix together flour, ginger and bicarbonate of soda then stir into the wet ingredients to form the cookie dough.

  5. Wrap in cling film and leave to chill in the fridge for 30 minutes.

  6. Using a floured rolling pin, roll out the pastry to about 5mm thick.

  7. Cut out rounds to make the reindeer faces

  8. Place the cut out cookies on a greased or non-stick baking tray then press a red mini Astro into the centre of each cookie to make the nose. Break each pretzel in half, then press into the cookie dough to form the antlers.

  9. Bake cookies for about 15 minutes or until golden brown.

  10. Remove from the oven and allow to cool completely.

  11. Place the melted chocolate into a piping bag then pipe two dots onto the cookies just above the nose to make the eyes.
