- 2 Plantains
- 1 tablespoon All Purpose Seasoning
- ½ teaspoon dried pepper
- 1 teaspoon Sunflower Oil
- 1 Whole Fish (head & tail attached)
- 1 Onion
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Tomato
Lay fish on flat surface.
Partially fillet fish in half and remove the tail; leaving only the head.
In small bowl combine all purpose seasoning and dried pepper, mix well.
Rub seasoning mixture on entire piece of fish.
Cover and sit over night in refrigerator.
Next day: Preheat oven to 200 degrees.
Keep fish covered in pan and cook for 20 minutes.
Fry plantains while fish is baking.
Peel plantains, and cut into ½ inch slices.
In a medium size pan, add sunflower oil and warm over medium heat.
Add plantains, and fry until golden brown color is reached on all sides.
Roughly chop onion, bell peppers, and tomato.
In separate pan combine onion, bell peppers, and tomato.
Sautee until soft consistency is reached.
Remove the fish from oven, and stuff veggie mixture inside of the fish.
Serve while warm.
