- 1 cup red bell pepper
- 1 cup green bell pepper
- 4 tbsp sunflower oil
- ½ cup chopped onions
- 2 tbsp stock
- 1 cup basmati rice
- 1 tsp thyme
- 2 tsp all-purpose seasoning
- 1 cup mixed veggies (frozen mix is fine)
- 1 cup water
- 1 whole small chicken
Pour 2 tablespoons sunflower oil into pot on medium low heat.
Add chopped onions, green & red diced peppers, stock, and 1 teaspoon all-purpose seasoning.
Simmer for 2 minutes. In the same pot, add mixed veggies and continue to simmer.
Wash the basmati rice; sieve water away.
In another pot, add 2 tablespoons of sunflower oil and basmati rice.
Add 1 teaspoon of thyme and all-purpose seasoning.
Fry the rice for 2 minutes.
Pour 1 cup of hot water into the rice and cook for 10 minutes on medium heat.
Add the cooked onion, pepper and mixed veggies to basmati rice.
Cover pot with cling wrap and cook for 15 minutes.
Chop chicken into pieces and place into cooking pot. Add water, onions, and 1 teaspoon all-purpose seasoning.
Stir and let it cook for 20 minutes on medium heat. When done, grill in oven for 10 minutes on 18 degrees Celsius.
Serve chicken with fried rice.
